Try cutting your slow cooked pork belly into cubes and deep frying for 1 to 2 mins in hot oil. The tasty crunchy pieces are a real treat as a nibble platter or added to a salad.
-Preheat oven to 240C.
-Dry off the rind with paper towel and rub with 2 tsp. of oil and 1 tsp. of salt into the rind.
-Place on a lined oven tray rind side up and place in the oven for 30 mins or until the desired crackling has been achieved.
-Allow to stand for 5 mins before carving.

TIP: If desired crackling does not appear, here are some ways to encourage it:
Turn grill to HIGH and place Pork Belly rind side up to heat – watch and remove from heat when desired crackling appears.
Heat a little oil in a frypan, place Pork Belly rind side down into hot oil for 5 – 10 mins – watch and remove when desired crackling appears.
