what you need
8 Three Aussie Farmers Shortcut Bacon Rasher, diced
4 ripe bananas, peeled and cut
1 Tbsp. vanilla extract
60ml maple syrup
250g unsalted butter, softened
1 ½ cups castor sugar
4 eggs
4 Tbsp. bacon drippings
2 ½ cups all purpose flour
1 tsp. baking soda
½ tsp. baking powder
how to make it
Preheat fan-forced oven to 165OC.
Use a fry-pan on med-high heat to cook bacon for 5 mins or until crispy. Set aside and reserve 4 Tbsp. of bacon drippings for later. Allow to cool.
In a large mixing bowl, mash the bananas, vanilla extract and maple syrup together.
Next add in the butter, sugar, eggs and bacon drippings. Whisk together until sugar has dissolved.
Place in the bacon, flour, baking soda and baking powder and whisk together until smooth.
Pour the batter into a lined bread tin. Bake for 1 hr 30 mins. Poke the cake with a skewer and if it comes out clean it's finished. If it's still wet continue to cook longer until a skewer comes out clean.
