Easy Spicy Sicilian Sausage Ragu with Cheesy Polenta

Warm up with this delicious Easy Spicy Sicilian Sausage ragu with Cheesy Polenta using Dan & Steph’s Spicy Sicilian Snags!

What you’ll need

  1. 500g Dan and Steph Spicy Sicilian Sausages
  2. 700ml Pasata
  3. 1 tin whole peeled tomatoes
  4. 1 Tbsp. olive oil
  5. 1 onion, diced
  6. 4 cloves garlic, minced
  7. 1 cup white wine
  8. Mixed cherry tomatoes
  9. 1 cup sliced roasted red capsicum
  10. 1/2 cup pitted sicilian olives
  11. 1/2 cup pitted kalamata olives
  12. 1/4 cup chopped parsley
  13. salt and pepper to season
  14. 2 cups polenta
  15. 1 cup grated cheddar cheese

How to make it

  1. Place a fry-pan over med heat with 1 Tbsp. olive oil.
  2. Cook onion and garlic for 2 mins or until tender.
  3. Squeeze out sausage insides and place into the fry-pan. Discard skins of sausages.
  4. Cook sausage, breaking apart with wooden spoon until it resembles mince.
  5. Pour in wine and cook for 2 mins. Pour in pasata, cherry tomatoes and whole tinned tomatoes. Bring to the boil, then reduce heat and allow to simmer for 20 mins.
  6. Add in olives, capsicum and parsley. Stir through. Season with salt and pepper.
  7. Cook polenta according to packet instructions. Add 1 cup of grated cheese to polenta and stir through until melted.
  8. Spoon ragu over polenta and serve immediately.
