What You Need
1 pack Three Aussie Farmers Texas Beef Sausages, casings removed
1 brown onion, finely diced
2 jalapenos, finely diced
1 garlic clove, minced
1 tsp. ground cumin
1 tsp. paprika
1 tsp. garlic powder
½ tsp. chilli powder
1 Tbsp. oil
Coriander, chopped, to serve
Red onion, sliced, to serve
Corn chips, to serve
Tex Mex Sauce
400g canned crushed tomatoes
2 Tbsp. chipotle sauce
1 Tbsp. white vinegar
½ cup beef stock
How To Make It
In a large mixing bowl, combine the sausage meat with, brown onion, jalapenos, garlic and spices then roll into golf ball size meatballs.
Heat oil in a large fry-pan over high heat and fry the meatballs until browned on all sides.
Add the tex mex sauce ingredients to the pan, then stir until well combined and bring to the boil.
Reduce heat to low and cover. Allow to simmer for 10 mins.
Remove from heat and sprinkle with coriander and red onions.
Serve with corn chips and enjoy!
