What You Need
1 pack Three Aussie Farmers Pulled Pork
4 sweet potatoes
100g cherry tomatoes, diced
1 capsicum, diced
100g black beans
200g cheese, grated
4 Tbsp. sour cream
1 small red onion, diced
2 jalapeños, diced
2 Tbsp. fresh parsley, chopped
How To Make It
Pre-heat fan forced oven to 180⁰C.
Cut off the top ⅓ of each sweet potato lengthways, then place onto a lined baking tray. Drizzle with oil, season with salt and pepper, then wrap in foil.
Bake the sweet potatoes in the oven for 20-25 mins or until starting to soften. Remove from the oven and scoop out a small amount of the sweet potato to create a bowl.
Heat the pulled pork according to pack instructions.
Load sweet potatoes with pulled pork, tomato, capsicum, black beans, and cheese, then return to the oven to bake until the cheese is melted and golden.
Remove from the oven, top with sour cream, red onion, jalapeños and parsley.
Serve and enjoy!
