Garlic and Thyme Farmhouse Sausage Skillet

A quick and tasty recipe that the whole family can enjoy! Packed full of flavour, this weeknight wonder will satisfy even the fussiest of eaters.

  1. Heat 2 Tbsp. olive oil in a large fry-pan over med-high heat. Add potatoes, cut side down and cook without stirring until they start to turn golden brown. Stir and continue cooking for 5 mins until all sides are crispy.  Season with salt, pepper and thyme.
  2. Add 1 Tbsp. of olive oil and the sliced sausages to the potatoes, cooking for 4-5 mins or until sausage pieces are crispy. 
  3. Add onions, stirring often, and cook for 5 mins or until onions have softened.
  4. Reduce heat to med. Add garlic, stirring for 1 min. Add kale, stirring regularly for 3 mins until the kale has wilted.
  5. Squeeze a lemon over the top of the dish and serve.

TIP: If the kale overcrowds the pan, sauté in a separate fry-pan before adding to the potato sausage mixture.
