what you need
1 pack Three Aussie Farmers Louisiana Sausages, casing removed
½ cup basil leaves
100g baby spinach leaves
2 garlic cloves, crushed
2 red chillies, chopped
100ml olive oil
1 lemon, juiced
500g spaghetti
50g parmesan, grated
50g pistachios, shelled
Salt and pepper, to taste
how to make it
Add basil, spinach, garlic, one chilli and olive oil to a blender and blitz into a paste. Add lemon juice and season with salt and pepper to taste.
Cook pasta according to pack instructions.
In a fry-pan over med-high heat, cook the sausage meat in bite size pieces until, browned on all sides. Remove and set aside
Add pesto sauce to the fry-pan and cook for 2-3 mins.
Add pasta and mix well, add 1-2 Tbsp. pasta water as needed to moisten the pan. Add the sausage meat and mix well.
Garnish with parmesan, pistachios and fresh basil leaves.
