Ham, Cheddar and Polenta Frittata

Impress your guests with this tasty Ham, Cheddar and Polenta Frittata. Serve it warm for breakfast, brunch or lunch with a fresh side salad.

What you’ll need

200g leg ham, diced

2 Tbsp. olive oil

1 onion, thinly sliced

2 garlic cloves, minced

1 ½ cup milk

1/3 cup polenta

6 eggs

1 ½ cup cheddar, grated

1 tsp. salt

½ tsp. pepper

1 cup zucchini, grated

12 cherry tomato halves

Rocket, to serve

Prosciutto, to serve

Figs, to serve

Balsamic glaze, to serve

How to make it

  1. Preheat oven to 200˚
  2. Heat oil in an oven proof fry-pan over med. heat. Add onion and cook for 2 mins. Add garlic and cook for 1 min.
  3. Add milk to fry-pan and 1 cup water. Bring to a simmer then whisk in polenta. Reduce heat and cooked for 8 mins or until polenta is almost cooked.
  4. Combine eggs, cheese, ham, zucchini, tomatoes, salt and pepper in a bowl. Stir through polenta mixture.
  5. Place fry-pan in oven and cooked for 20 – 30 mins or until golden.
  6. Top frittata with rocket, prosciutto, Figs and a drizzle of balsamic glaze.
