Ham & Tomato Breakfast Tray Bake
This recipe has everything you want in a breakfast, eggs, ham and even cheese. All you will need is your favourite mug filled with coffee or a glass of OJ and you’ve got yourself the perfect start to the day.
What You Need
- 250g Three Aussie Farms Centre Cut Leg Ham, diced
- 2 tsp. oil
- 12 eggs
- 1/2 cup cream
- 1/2 cup parmesan plus extra for topping, grated
- 1/2 cup cheddar cheese, grated
- 2 vines small truss tomatoes, sliced/halved
- 2 spring onions, sliced
- 1 Tbsp. fresh basil, chopped, extra to garnish
How To Make It
- Preheat fan forced oven to 180°C.
- In a large fry-pan on a med. heat oil. Add the ham and sauté until lightly brown, about 7 minutes.
- Whisk eggs, cream and cheese in a bowl, and season with salt and pepper.
- Pour into a lined baking dish.
- Top with ham, and tomato and place into the oven for approx. 25 mins.
- Remove from oven once it has set, stand for 5-10 mins before slicing.
- Sprinkle extra parmesan on the top.
- Serve and enjoy!
