what you need
1 pack Three Aussie Farmers Outback BBQ Burgers
2 cups sweet potato fries
100g Greek yoghurt
2 Tbsp. fresh mint, chopped
1 Tbsp. lime juice
4 Indian Roti breads
1 cucumber, cut into ribbons
2 Tbsp. eggplant relish
2 Tbsp. mango chutney
100g pickled red onion, sliced
2 sprigs fresh mint leaves, to serve
how to make it
Cook sweet potatoes fries according to pack instructions.
Cook burgers according to pack instructions
Make a riata by combining yoghurt, mint and lime juice together in a small bowl, then refrigerate.
Warm naan bread according to pack instructions.
Assemble burgers by spreading riata onto the roti, top with cucumber, eggplant relish, burger pattie, mango chutney and pickled onion.
Garnish with fresh mint and serve with sweet potato fries. Enjoy!
