how to make it

  1. Wash capsicums and cut top and bottom ends off to make hollow and remove seeds.  Slice into rings approx. 3cm wide and set aside.
  2. In a bowl, combine burger patties, breadcrumbs, and egg.
  3. Take capsicum rings and fill them with meat stuffing, ensure that each ring is generously filled.
  4. Add oil to a fry-pan and shallow fry, over med heat, until golden and cooked through.  Set aside on a paper towel.
  5. In a blender, add roasted capsicum, oil, almonds, garlic, lemon juice, parsley and parmesan and blend for a textured paste.
  6. Construct burger, spread roasted capsicum on the bottom bun and layer capsicum rings with cucumber, alternating coloured capsicum as you go.  Top with chili jam and bun.
  7. Serve & enjoy!

If we’re being straight up, this burger is modelled on that buffalo sauce we all know and love.

Made from 100% Aussie grown pork, she’s a bit spicy and a bit tangy and well worth a go. There’s a bite of a bite, but it’s definitely on the mild end of things – so don’t be afraid of the heat!
