Pork Pesto Puff Ring

If you’re after a show stopper look no further. This beautiful Pork Pesto Puff Ring is not only a looker but tastes amazing too!

What you’ll need

1 pack Three Aussie Farmers Pork Porterhouse with Garlic and Chive Seasoning

4 sheets puff pastry

1/2 cup basil pesto

1/2 cup sundried tomatoes

1/4 cup olive tapenade

8 bocconcini balls

1 egg, whisked

  1. Pre-heat fan forced oven to 180°C.
  2. Slice Pork Porterhouse into 1cm thick strips.
  3. Lay all 4 sheets of pastry on the bench and stick all edges together to form a large square. Using a small bowl as a guide, cut a circle from the centre of the pastry square.
  4. Spread olive tapenade and pesto in a 5cm wide circular band on the pastry. Place Porterhouse, sundried tomatoes and bocconcini on top of the tapenade/pesto band.
  5. Fold pastry over the Porterhouse mix and tuck in edges so that the pastry forms a ring shape.
  6. Brush with egg and place in the oven for 40 mins.
  7. Serve immediately and enjoy!
