Pork Porterhouse with Roasted Cauliflower and Brown Butter dressing

Try this delicious dish for dinner tonight! Pork Porterhouse steaks with Roasted Cauliflower and Brown Butter Dressing – YUM!

What you’ll need

  1. 3 Tbsp. olive oil
  2. 1 large head of cauliflower
  3. Salt and pepper
  4. 2 Tbsp. unsalted butter
  5. ¼ cup pumpkin seeds
  6. ½ tsp. chilli flakes
  7. Large handful of coriander, chopped
  8. 1 tsbp lime juice

How to make it

  1. Preheat oven to 230°C.
  2. Line a baking tray with baking paper then grease with 1 Tbsp. olive oil.
  3. Halve cauliflower and thinly slice into ½” slices.
  4. Arrange cauliflower on tray in a single layer. Drizzle with 1 Tbsp. oil then season with salt and pepper.
  5. Roast for 20-30 minutes until charred and crisp.
  6. Meanwhile, melt butter in frying pan over medium heat. Toast pumpkin seeds for around 5 minutes until butter browns.
  7. Transfer to a bowl and stir through chilli flakes, coriander and lime juice then leave to cool.
  8. In the same frying heat 1 Tbsp. olive oil. Fry the porterhouse steak for 6-8 minutes on each side until cooked through.
  9. Serve the porterhouse and cauliflower drizzled with the brown butter pumpkin seed dressing.
