what you need
1 pack Three Aussie Farmers Pulled Pork
100ml Greek yoghurt
1 ½ tsp. cumin
2 Tbsp. lime juice.
4 Tbsp. oil
1 red onion, sliced
½ tsp. paprika
½ tsp. chili powder
½ tsp. garlic powder
1 red capsicum, sliced
1 green capsicum, sliced
1 yellow capsicum, sliced
salt and pepper
8 tortillas
Fresh coriander, to serve
Pico De Gallo
1 red onion, diced
4 large tomatoes, diced
½ cup fresh coriander, roughly chopped
1 lime, juiced
1 tsp. salt
how to make it
Mix all the ingredients for the Pico De Gallo together in a bowl and set aside until ready to serve.
In a small bowl, mix yoghurt, 1 tsp. cumin and 1 Tbsp. lime juice until combined and set aside.
Add 1 Tbsp. oil to large frypan over med. high heat and cook onion until soft, add pulled pork, cumin, paprika, chili powder, garlic powder, 1 tbsp lime juice and cook for 5 mins or until heated through and transfer to a serving bowl.
In the same pan, add a small amount of oil into the pan and add the capsicum. Sautee over high heat for 3-4 mins and transfer to a serving bowl.
Heat tortillas in a separate pan for approx. 30 secs per side to warm them.
Serve tortillas with pork, add pico de gallo and drizzle with yoghurt, garnish with fresh coriander

You can’t go wrong with pulled pork. Especially slow cooked Aussie pulled pork that’s faster to make than baked beans on toast. It’s a big claim, but this might be the best thing since sliced bread… The only hard bit is deciding how to eat it – sliders, nachos, tacos, wraps, salads, pasta,- or you could forget that and just grab a fork.
