PUlled Pork Loaded Potato

  1. Preheat fan-forced oven to 180⁰C. 
  2. Using a fork, poke holes into each potato, cover in oil and season with salt and pepper.
  3. Place potatoes in a baking tray and bake in the oven for 1 hour or until tender.
  4. While potatoes are baking, prepare toppings and pulled pork.
  5. Heat pork according to pack instructions, adding barbecue sauce and stirring until evenly coated.
  6. When potatoes are ready, remove from oven, slice off the top and hollow out with a spoon, then place the insides into a bowl.
  7. Mash the potato insides, then add butter, 1/3 cup sour cream and 1 cup of cheese and mix.
  8. Spoon potato mix back into the potatoes, then top generously with pulled pork.
  9. Add a selection of your favourite toppings, grated cheese, red onion, additional sour cream, spring onions, tomato or jalapeno.
  10. Serve and enjoy!

You can’t go wrong with pulled pork.  Especially slow cooked Aussie pulled pork that’s faster to make than baked beans on toast.  It’s a big claim, but this might be the best thing since sliced bread… The only hard bit is deciding how to eat it – sliders, nachos, tacos, wraps, salads, pasta,- or you could forget that and just grab a fork.
