Pulled Pork & Pineapple Damper Rolls

Don’t let the cold weather damper your spirits. Cook this up on the fire or in the oven to warm you up this winter.

What you’ll need

  1. 250g Three Aussie Farmers Pulled Pork
  2. 1 Tbsp. Olive Oil
  3. 2 Tbsp. butter
  4. 8 pineapple slices
  5. 2 cups coleslaw
  6. 1 cup BBQ Sauce
  7. 450g self raising flour
  8. pinch of salt
  9. 80g butter, cubed
  10. 185ml water

How to make it

  1. Preheat oven to 200° C.
  2. Combine flour and salt in a large bowl. Using your fingertips, rub the butter into the flour until the mixture resembles breadcrumbs.
  3. Add the water and use a knife in a cutting motion to mix until it comes together. Use your hands to bring the mixture together. Add extra water if too dry.
  4. Gently knead on a floured surface for 1-2 mins or until smooth. Shape into 8 rolls, dust with flour and bake for 20 – 30 mins or until cooked through.
  5. Heat pulled pork according to packet instructions.
  6. Stir BBQ sauce through pork.
  7. Cut roll in half and spread with 1 Tbsp. of butter. top with coleslaw, pineapple slice and pulled pork. Repeat with remaining rolls.
