Sausage and Pesto Pasta Salad

If you love the flavour of herbs this Sausage and Pesto Pasta Salad is for you! Juicy, herby pork sausages tossed in pasta with pesto and parsley.

What you’ll need

1 pack Three Aussie Farmers Farmhouse Sausages

500g pasta

4 Tbsp. pesto

3 Tbsp. pine nuts, toasted

Juice of ½ lemon

250g cherry tomatoes, halved

100g cherry bocconcini, halved

½ red onion, sliced

Large handful of parsley, chopped

Salt and pepper, to taste

How to make it

  1. Cook Farmhouse Sausages according to pack instructions.
  2. Cook pasta according to pack instructions and rinse under cold water. Leave to drain.
  3. Heat a frying pan on low-med. heat and lightly toast the pine nuts. Set aside.
  4. In a large salad bowl, mix together the pesto and lemon juice.
  5. Add the tomatoes, bocconcini, red onion, pine nuts, parsley and cold pasta. Mix together thoroughly. Chop the sausages up into bite size pieces and stir through. Season with salt and pepper to taste.
  6. Serve topped with shaved parmesan.
