Pork Porterhouse with grilled vegetable stack

What you’ll need

1 packet Pork Porterhouse with garlic and chive seasoning

1 sweet potato, sliced into 1cm think pieces

1 eggplant, sliced into 1cm thick pieces

1 red capsicum, sliced into 4 pieces

1 zucchini, sliced into 1 cm thick pieces

2 Tbsp. Olive Oil

How to make it

  1. Cook Pork Porterhouse according to packet instructions.
  2. Heat olive oil in large griddle pan over med-high heat.
  3. Place sweet potato, eggplant, red capsicum and zucchini in pan. Cook for 10 mins or until cooked through.
  4. Season to taste and serve Pork Porterhouse with grilled vegetable medley.
