Zesty Mojo Pulled Pork Rolls

You can't go wrong with our slow cooked Aussie pulled pork and this fresh citrus mojo drizzle. Bang it in a roll for a quick weekend lunch in the backyard.

  1. Prepare mojo marinade by blending oil, garlic, lime juice, orange juice, cumin, paprika, mint and coriander until a smooth paste forms.
  2. Add ⅔ of marinade to a bowl and mix through pulled pork, then refrigerate for 1 hr.
  3. In a fry-pan over med-high heat, cook pork for 5 mins.
  4. Slice bread rolls in half and fill with a generous amount of pulled pork, drizzle with mojo sauce, garnish with thin slices of eschalots and herbs.
  5. Serve and enjoy!

You can’t go wrong with pulled pork.  Especially slow cooked Aussie pulled pork that’s faster to make than baked beans on toast.  It’s a big claim, but this might be the best thing since sliced bread… The only hard bit is deciding how to eat it – sliders, nachos, tacos, wraps, salads, pasta,- or you could forget that and just grab a fork.
