What You Need

  • 1 pack Three Aussie Farmers Texas BBQ Style Sausages, casings removed 
  • 1 brown onion, chopped
  • 1 jalapeno, chopped
  • 1 Tbsp. chilli powder
  • 2 tsp. garlic powder
  • 2 tsp. smoked paprika
  • 1 tsp. cumin
  • 800g crushed canned tomatoes
  • 65g tomato paste
  • 115g adobo sauce 
  • 450ml beef stock
  • 2 cups water
  • 450g macaroni pasta
  • 4 Tbsp. hot sauce 
  • 60g cream cheese, room temperature
  • 125g cheddar cheese
  • 125g mozzarella cheese
  • Coriander, to garnish 

How To Make It

  1. Pre-heat oven to 220°C.
  2. In a pot over med-high heat add onion, cook for 5 mins until softened then add sausage meat. Break up the sausage meat and cook until all the meat has browned.
  3. Stir in jalapeno, chilli powder, garlic powder, paprika and cumin, cook for 5 mins until fragrant. Add in the canned tomatoes, tomato paste and adobo sauce. Pour in beef stock and water then season with salt and pepper.
  4. Stir through the macaroni, cover and bring to a boil. Simmer for 10 mins until the macaroni is cooked, stirring frequently.
  5. Once the macaroni is cooked, reduce the heat to low-med, add hot sauce, cream cheese and half of each cheese. Cook for another 5 mins and stir until everything is well combined.
  6. Transfer to a baking dish, top with the remaining cheese and bake for 5-10 mins until the cheese is melted and bubbly.
  7. Garnish with coriander, serve and enjoy!
