White Wine Braised Sausages with Potatoes
Three Aussie Farmers sausages braised in white wine and paired with tender potatoes for a rustic and heartwarming dish.
What You Need
- 1 pack Three Aussie Farmers Farmhouse Sausages
- 250g SunPork Fresh Foods Bacon, sliced
- 1 Tbsp. olive oil
- 4 eschallots, peeled and halved
- 4 garlic cloves, minced
- 400g baby potatoes
- 2 Tbsp. brandy
- 250ml white wine
- 250ml chicken stock
- 4 fresh thyme springs, stalks removed
- 2 bay leaves
- 150g prunes
- Parsley, to garnish
- Salt and pepper, to season
How To Make It
- Heat the oil in a Dutch oven or oven-proof pan over med heat. Add sausages and cook until browned all over. Remove from the pan and set aside.
- In the same pan, add bacon and eschallots, then cook for 7 mins until the bacon starts to crisp. Add garlic and cook for 1 min before adding potatoes and brandy. Allow the brandy to bubble and reduce slightly.
- Add the white wine, stock, thyme and bay leaves. Return the sausages to the pan, season with salt and pepper and allow everything to come to the boil. Reduce the heat to low, cover and cook for 20 mins.
- Add prunes and stir to combine, then continue to simmer for 10 mins with the lid off.
- Garnish with parsley, then serve and enjoy!
