Ham & Cheese Crepe
Got leftover Christmas ham staring at you every time you open the fridge? It’s time to give that delicious ham a fresh twist! Whip up these ham and cheese crepes, because the only thing better than Christmas ham is wrapping it in a soft crepe blanket.
What You Need
- 250g Three Aussie Farmers leftover Christmas ham, thinly sliced
- 1 ¼ cup milk
- 3 eggs
- 30g butter, plus extra for the pan, melted
- 115g flour
- 2 tsp. sugar
- ½ tsp salt
- 100g gruyere cheese, grated
- 100g spinach
How To Make It
- In a bowl add milk and egg, then whisk until well combined. Pour in the melted butter and whisk in.
- To a separate bowl combine flour, sugar and salt. Add 1 cup of the liquid mixture to the flour and mix until it forms a smooth paste.
- Add in the rest of the liquid and mix until smooth.
- Cover the crepe batter and set aside to rest for 30 mins.
- Over a med. heat, heat a 25cm pan. Coat pan with butter then pour ¼ cup of batter into the pan and swirl to evenly spread the batter over the pan.
- Cook the crepe for 30 secs until the edges just start to brown, flip and cook for a further 20 secs.
- Stack the cooked crepes on a wire rack and repeat the process until all the batter is used.
- Once the crepes are cooked, place the ham, cheese and spinach on one half of the crepe. Fold the other side over and fold it once again the other way to make a quarter pocket.
- Serve and enjoy!
