Hearty Vegetable Hock Pasta Soup
It’s starting to feel like soup season! This one’s simple, packed with flavour and full of veg so it’s a guaranteed winner.
what you need
- 1 Three Aussie Farmers Wood Smoked Bacon Hock
- 2 brown onion, quartered
- 2 carrots, chopped
- 3 celery stalks, chopped
- 50g unsalted butter
- 1 Tbsp. dried oregano
- 1 tsp. dried thyme
- 1 bay leaf
- 1 tsp. whole black peppercorns
- 1.5L vegetable stock
- 300g shell pasta
- 4 bread rolls, to serve
how to make it
- In a large fry-pan over high heat, cook the onions, carrots and celery in butter until browned all over then transfer to a slow cooker.
- Add in the hock, oregano, thyme, bay leaf, peppercorns and vegetable stock. Set the slow cooker to high and cook for 7 hrs.
- 10 mins before serving cook shell pasta according to pack instructions. Remove the bone from the hock and shred the meat. Add the pasta in and stir through.
- Serve and enjoy!
