Mason Jar Pulled Pork Ramen

Be the envy of your lunch pals with this quick and simple mason jar ramen for the work day. Even better you can prep ahead of time!

what you need

  • 1 pack Three Aussie Farmers Pulled Pork
  • 4 eggs
  • 1 cup soy sauce
  • 60ml black vinegar
  • 2 Tbsp. sugar
  • 1 Tbsp. sesame seeds, toasted and slightly crushed
  • 2 garlic cloves, minced
  • 1 small red chilli, sliced
  • 4 packets instant ramen noodles
  • 50g white miso paste
  • 50g chicken stock
  • 4 tsp. tahini
  • 2 tsp. sesame oil
  • 2 tsp. sambal oelek
  • 1 cup bean sprouts
  • 2 carrots, peeled in ribbons
  • ½ red onion, thinly sliced
  • 2 spring onions, thinly sliced
  • 4 mason jars

how to make it

  1. Boil eggs for 7 mins and transfer to ice water to cool.  Peel immediately.
  2. In a shallow dish, add soy sauce, vinegar, sugar, sesame seeds, garlic and chilli and stir until sugar has dissolve. Add eggs and enough water to cover.  Allow to marinate for approx. 2 hrs.
  3. In a saucepan, partially cook ramen noodles until they just start to soften.  Remove from the pot, rinse with cool water and drain.
  4. Take mason jars and divide evenly into each jar the miso, stock, tahini, sesame oil, sambal, bean sprouts and carrots. Top with ramen noodles and marinated egg.
  5. Place red onions and spring onions around the top of each jar. Refrigerate until ready to eat.
  6. When lunchtime comes, remove egg, add boiling water and stir. 
  7. Slice egg and return to jar.
  8. Eat and enjoy!

You can’t go wrong with pulled pork.  Especially slow cooked Aussie pulled pork that’s faster to make than baked beans on toast.  It’s a big claim, but this might be the best thing since sliced bread… The only hard bit is deciding how to eat it – sliders, nachos, tacos, wraps, salads, pasta,- or you could forget that and just grab a fork.
