Pulled Pork Lettuce Cups

A quick and easy meal that even the kids can get involved with!

what you need

  • 2 packs Three Aussie Farmers Pulled Pork
  • 1 large ice-berg lettuce, pulled apart to make cups
  • 1 Tbsp. miso paste
  • 150ml Sriracha
  • 100ml water
  • 80ml soy sauce
  • 3 Tbsp. sesame oil
  • 3 Tbsp. sesame seeds
  • 1 red capsicum, diced
  • 1 yellow capsicum, diced
  • 2 brown onions, sliced
  • 1 bunch radish, sliced
  • 1 garlic clove, crushed
  • Rice wine vinegar
  • Shallots, sliced, to serve
  • Chilli, sliced, optional

how to make it

  1. Place Pulled Pork into a large pan on medium heat then add onions, miso paste, sriracha, soy sauce and water. Mix until combined.
  2. Remove from heat then add sesame oil, tossing to combine.
  3. Put radish and garlic into a bowl and cover with rice wine vinegar. Cover and refrigerate for 10 mins to pickle.
  4. Spoon Pulled Pork mix into lettuce cups, top with capsicum and pickled radish. Sprinkle with shallots and a few more sesame seeds. Add fresh sliced chilli if desired.
  5. Serve and enjoy!
