Pulled Pork & Red Cabbage Sub
Juicy pulled pork, and tangy red cabbage slaw topped with bacon and cheese. This Pulled Pork & Red Cabbage Sub may just be your new go-to sandwich option.
What You Need
- 1 pack Three Aussie Farmers Slow Cooked Pulled Pork
- 8 slices SunPork Fresh Foods Bacon Rashers
- ½ small red cabbage, thinly sliced
- ½ red onion, thinly sliced
- ¼ cup mint, roughly chopped
- 1 red chilli, thinly sliced
- 3 Tbsp. olive oil
- ½ lemon, juiced and zested
- ¼ cup mayo
- 4 sub rolls, sliced and warmed
- 8 slices Swiss cheese
How To Make It
- In a bowl, combine red cabbage, red onion, mint and chilli. Toss together with 2 Tbsp olive oil, lemon juice and zest then set aside.
- In a fry-pan heat 1 Tbsp. oil over med-high heat. Add bacon and cook for 2-4 mins on each side until crispy.
- Cook pulled pork according to pack instructions.
- Spread a generous amount of mayo on each of the bread rolls. Add cabbage, layer generously with pulled pork.
- Top with crispy bacon and cheese then grill for 1 min to melt cheese before serving.
- Serve and enjoy!
You can’t go wrong with pulled pork. Especially slow cooked Aussie pulled pork that’s faster to make than baked beans on toast. It’s a big claim, but this might be the best thing since sliced bread… The only hard bit is deciding how to eat it – sliders, nachos, tacos, wraps, salads, pasta,- or you could forget that and just grab a fork.
