What You Need

  • 1 pack Three Aussie Farmers Slow Cooked Pulled Pork
  • 8 slices SunPork Fresh Foods Bacon Rashers
  • ½ small red cabbage, thinly sliced
  • ½ red onion, thinly sliced
  • ¼ cup mint, roughly chopped
  • 1 red chilli, thinly sliced
  • 3 Tbsp. olive oil
  • ½ lemon, juiced and zested
  • ¼ cup mayo
  • 4 sub rolls, sliced and warmed
  • 8 slices Swiss cheese

How To Make It

  1. In a bowl, combine red cabbage, red onion, mint and chilli. Toss together with 2 Tbsp olive oil, lemon juice and zest then set aside.
  2. In a fry-pan heat 1 Tbsp. oil over med-high heat. Add bacon and cook for 2-4 mins on each side until crispy.
  3. Cook pulled pork according to pack instructions.
  4. Spread a generous amount of mayo on each of the bread rolls. Add cabbage, layer generously with pulled pork.
  5. Top with crispy bacon and cheese then grill for 1 min to melt cheese before serving.
  6. Serve and enjoy!
