Savoury French Toast with Pulled Pork & Poached Egg

The perfect start to any lazy morning is a delicious breakfast, and this mouthwatering pulled pork French toast with a runny poached egg will hit the spot.

what you need

  • 1 pack Three Aussie Farmers BBQ Pulled Pork
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1 Tbsp. brown sugar
  • ½ cup milk
  • ½ cup thickened cream
  • 11 eggs
  • 2 Tbsp. cinnamon
  • 2 Tbsp. butter
  • 4 Tbsp. maple syrup
  • 2 sprigs fresh parsley, chopped
  • 8 slices crusty bread, thickly sliced

how to make it

  1. Pre-heat fan forced oven to 120⁰C.
  2. In a large bowl, combine garlic powder, onion powder, paprika, sugar and pulled pork then refrigerate for 1hr.
  3. Place pulled pork into an oven safe dish and cover, then place in the oven to heat.
  4. Whisk milk, cream, 3 eggs and cinnamon in a shallow bowl.
  5. In a fry-pan over med. heat add butter and allow to melt.
  6. Working in batches, dip the bread into the cream mixture and into the fry-pan, cooking for 1-2 mins each side until golden.
  7. Place cooked toast onto a wire rack and into the oven to keep warm while you complete the remaining toast.
  8. Poach eggs and assemble meal.
  9. Prepare French toast stacks by placing one piece of toast on 4 plates, then cover each piece generously with pulled pork, top with two poached eggs, drizzle with maple syrup and garnish with chopped parsley. Add second piece of toast each stack to serve. Enjoy!

You can’t go wrong with pulled pork.  Especially slow cooked Aussie pulled pork that’s faster to make than baked beans on toast.  It’s a big claim, but this might be the best thing since sliced bread… The only hard bit is deciding how to eat it – sliders, nachos, tacos, wraps, salads, pasta,- or you could forget that and just grab a fork.
