Southwest BBQ Pulled Pork Salad Mason Jars

What You Need

  • 1 pack Three Aussie Farmers BBQ Pulled Pork
  • 200g corn kernels, drained
  • 200g black beans
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ¼ tsp. cumin
  • ¼ tsp. smoked paprika
  • 1 small capsicum, sliced
  • 1 avocado, cubed
  • 1 cup smoky cheese, grated
  • 100g mixed lettuce leaves
  • 4 Tbsp. chipotle mayo
  • 4 mason jars

How To Make It

  1. Cook pulled pork according to pack instructions.
  2. In a fry-pan over med. heat, add corn kernels and cook until slightly charred then set aside.
  3. Rinse and drain black beans, then place into a small saucepan on med. heat with 2 Tbsp. water, garlic powder, onion powder, cumin and paprika. Cook until the beans have heated through.
  4. Layer mason jars with pulled pork, black beans, capsicum, avocado, corn, smoky cheese and lettuce leaves.
  5. Top with chipotle mayo to serve and enjoy!
