Toffee Apple Glazed Ham

What You Need

  • 1 Three Aussie Farmers Shoulder Ham
  • 1L apple cider
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 5 apples, cored and quartered
  • 2 ½ cups caster sugar
  • ¼ warm water
  • 1 lemon, zested
  • Whole cloves, optional

How To Make It

  1. Pre-heat fan forced oven to 160°C and line a roasting pan with baking paper.
  2. In a pot over med-high heat, add the cider, cinnamon, and allspice. Bring to a boil, then remove from heat and let it cool slightly.
  3. Transfer the mixture to a blender along with the apples and blend until smooth. Strain through a sieve into a bowl, discarding the solids.
  4. Combine the sugar and water in a pot and place over a med-high heat. Cook for 10-15 mins, until it turns a light amber colour.
  5. Remove from heat and slowly whisk in the apple mixture and lemon zest. Return to high heat, bring to a boil, then reduce to med and simmer for 25-30 mins until the glaze thickens to a syrupy consistency.
  6. Cut through the rind about 10-15cm from the hock end, and starting at the larger end carefully peel the rind back using your fingers to separate the rind from the fat.
  7. Score the fat, being careful not to cut into the meat. Optionally, stud the ham with cloves for extra flavour.
  8. Place the ham in the prepared roasting pan. Pour over the glaze and roast for 30 mins.
  9. Baste the ham every 15 mins for about 1 hr 30 mins, or until the glaze is caramelised and sticky.
  10. Remove the ham from the oven and allow it to rest for 15-20 mins before slicing.
  11. Serve and enjoy!
