What You Need
- 1 Three Aussie Farmers Shoulder Ham
- 1L apple cider
- 1 tsp. cinnamon
- 1 tsp. allspice
- 5 apples, cored and quartered
- 2 ½ cups caster sugar
- ¼ warm water
- 1 lemon, zested
- Whole cloves, optional
How To Make It
- Pre-heat fan forced oven to 160°C and line a roasting pan with baking paper.
- In a pot over med-high heat, add the cider, cinnamon, and allspice. Bring to a boil, then remove from heat and let it cool slightly.
- Transfer the mixture to a blender along with the apples and blend until smooth. Strain through a sieve into a bowl, discarding the solids.
- Combine the sugar and water in a pot and place over a med-high heat. Cook for 10-15 mins, until it turns a light amber colour.
- Remove from heat and slowly whisk in the apple mixture and lemon zest. Return to high heat, bring to a boil, then reduce to med and simmer for 25-30 mins until the glaze thickens to a syrupy consistency.
- Cut through the rind about 10-15cm from the hock end, and starting at the larger end carefully peel the rind back using your fingers to separate the rind from the fat.
- Score the fat, being careful not to cut into the meat. Optionally, stud the ham with cloves for extra flavour.
- Place the ham in the prepared roasting pan. Pour over the glaze and roast for 30 mins.
- Baste the ham every 15 mins for about 1 hr 30 mins, or until the glaze is caramelised and sticky.
- Remove the ham from the oven and allow it to rest for 15-20 mins before slicing.
- Serve and enjoy!
