Crunchy Smashed Potatoes with Cheesy Ham Dipping Sauce
When it comes to tasty snacks, its hard to turn down crispy, golden potatoes, especially when you can dip them into cheesy ham. It’s heaven on a plate. Good luck keeping this one to yourself.
what you need
- 150g Three Aussie Farmers Leg Ham, diced
- 1kg white baby potatoes
- 2 Tbsp. oil
- 2 Tbsp. salt
- 2 Tbsp. butter
- ½ onion, finely diced
- 200g cream cheese
- 1 cup mozzarella cheese, grated
- Chives, to garnish
how to make it
- Pre-heat fan forced oven to 200⁰C.
- In a large pot of salted water, place whole potatoes and bring to the boil. Cook until soft.
- Drain potatoes and set aside to cool.
- Place potatoes in a single layer on a lined baking tray, then smash each potato using a flat bottom cup or glass.
- Repeat until all potatoes are smashed, brush with oil and generously sprinkle with salt then place in the oven to crisp up.
- While potatoes are getting crispy, prepare cheesy ham dipping sauce.
- In a fry-pan over med-high heat, melt butter and sauté onion. Add ham and cook for 2 mins before adding cream cheese and mozzarella, stir until combined. Pour into a ramekin and place in the oven until cheese has fully melted.
- Serve smashed potatoes with dipping sauce. Enjoy!
