Fully Loaded Sweet Potatoes
Whether you’re looking for a simple weeknight dinner or a delicious dish to serve at your next gathering, these fully loaded sweet potatoes have got you covered.
What You Need
- 1 pack Three Aussie Farmers Pulled Pork
- 4 sweet potatoes
- 100g cherry tomatoes, diced
- 1 capsicum, diced
- 100g black beans
- 200g cheese, grated
- 4 Tbsp. sour cream
- 1 small red onion, diced
- 2 jalapeños, diced
- 2 Tbsp. fresh parsley, chopped
How To Make It
- Pre-heat fan forced oven to 180⁰C.
- Cut off the top ⅓ of each sweet potato lengthways, then place onto a lined baking tray. Drizzle with oil, season with salt and pepper, then wrap in foil.
- Bake the sweet potatoes in the oven for 20-25 mins or until starting to soften. Remove from the oven and scoop out a small amount of the sweet potato to create a bowl.
- Heat the pulled pork according to pack instructions.
- Load sweet potatoes with pulled pork, tomato, capsicum, black beans, and cheese, then return to the oven to bake until the cheese is melted and golden.
- Remove from the oven, top with sour cream, red onion, jalapeños and parsley.
- Serve and enjoy!
You can’t go wrong with pulled pork. Especially slow cooked Aussie pulled pork that’s faster to make than baked beans on toast. It’s a big claim, but this might be the best thing since sliced bread… The only hard bit is deciding how to eat it – sliders, nachos, tacos, wraps, salads, pasta,- or you could forget that and just grab a fork.
