Ham Tartare

Running out of ideas on how to use up the leftover Christmas ham? Get a bit fancy and have a go at a ham tartare for brekky!  It’s a bit unusual, but give it a crack. It might just be the best thing you’ve tried all year.

what you need

  • 200g Three Aussie Farmers Half Leg Ham, finely diced
  • 2 Tbsp. fresh parsley, chopped
  • 2 Tbsp. capers, finely chopped
  • 2 Tbsp. cornichons, finely chopped
  • 2 Tbsp. shallots, finely chopped
  • 2 tsp. Worcestershire sauce
  • 1 tsp. Dijon mustard
  • 1 tsp. seeded mustard
  • 2 egg yolks (optional if desired)
  • 4 slices baguette, toasted
  • Cornichons to garnish

how to make it

  1. In a bowl combine ham, parsley, capers, cornichons, shallots, Worcestershire sauce, mustards and season with salt and pepper. Mix well to combine.
  2. Press half the mix into a small round ramekin to mold into shape, then turn out onto a plate.
  3. Make a small well in the top of the ham mix with the back of a spoon and gently place an egg yolk on each portion.
  4. Garnish the plate with additional mustard, toasted baguette and extra cornichons.
  5. Serve and enjoy!
