

Ham Tartare
Running out of ideas on how to use up the leftover Christmas ham? Get a bit fancy and have a go at a ham tartare for brekky! It’s a bit unusual, but give it a crack. It might just be the best thing you’ve tried all year.
what you need
- 200g Three Aussie Farmers Half Leg Ham, finely diced
- 2 Tbsp. fresh parsley, chopped
- 2 Tbsp. capers, finely chopped
- 2 Tbsp. cornichons, finely chopped
- 2 Tbsp. shallots, finely chopped
- 2 tsp. Worcestershire sauce
- 1 tsp. Dijon mustard
- 1 tsp. seeded mustard
- 2 egg yolks (optional if desired)
- 4 slices baguette, toasted
- Cornichons to garnish
how to make it
- In a bowl combine ham, parsley, capers, cornichons, shallots, Worcestershire sauce, mustards and season with salt and pepper. Mix well to combine.
- Press half the mix into a small round ramekin to mold into shape, then turn out onto a plate.
- Make a small well in the top of the ham mix with the back of a spoon and gently place an egg yolk on each portion.
- Garnish the plate with additional mustard, toasted baguette and extra cornichons.
- Serve and enjoy!
