Ham & Zucchini Mini Quiches
A tasty snack on the run or something for the lunchbox, these little quiches are quick and easy to prepare, full of flavour and they even have a little hidden veg!
What You Need
- 200g Three Aussie Farmers Half Leg Ham, diced
- 4 sheets puff pastry
- 8 eggs, beaten
- 100ml thickened cream
- 1 zucchini, grated
- 50g cheese, grated
- Salt and pepper, to taste
How To Make It
- Pre-heat fan forced oven to 200⁰C.
- Using a round cookie cutter, cut pastry to an appropriate size to fit in a muffin tray.
- In a bowl mix eggs, cream, ham, zucchini and season with salt & pepper. Spoon into muffin tray and top with cheese.
- Transfer to the oven and bake in the oven for 20 mins.
- Serve and enjoy!
