Jingle Bell Pepper Burger
Looking for an easy way to turn a backyard barbie into a Christmas in July special? Stacked full of flavour, this burger will make you look like you’re all over the times.
what you need
- 1 pack of Three Aussie Farmers Great Aussie Bite Burgers
- 3 capsicums (red, yellow and green)
- ⅓ cup breadcrumbs
- 1 egg, lightly beaten
- 3 Tbsp. cooking oil
- 1 jar roasted capsicum, drained
- ½ cup olive oil
- ½ cup almonds
- 1 garlic clove, crushed
- 1 lemon, juiced
- 3 Tbsp. fresh parsley
- ½ cup parmesan cheese, grated
- 1 cucumber, peeled into ribbons
- 2 brioche bread rolls
- 1 Tbsp. chili jam
how to make it
- Wash capsicums and cut top and bottom ends off to make hollow and remove seeds. Slice into rings approx. 3cm wide and set aside.
- In a bowl, combine burger patties, breadcrumbs, and egg.
- Take capsicum rings and fill them with meat stuffing, ensure that each ring is generously filled.
- Add oil to a fry-pan and shallow fry, over med heat, until golden and cooked through. Set aside on a paper towel.
- In a blender, add roasted capsicum, oil, almonds, garlic, lemon juice, parsley and parmesan and blend for a textured paste.
- Construct burger, spread roasted capsicum on the bottom bun and layer capsicum rings with cucumber, alternating coloured capsicum as you go. Top with chili jam and bun.
- Serve & enjoy!
If we’re being straight up, this burger is modelled on that buffalo sauce we all know and love.
Made from 100% Aussie grown pork, she’s a bit spicy and a bit tangy and well worth a go. There’s a bite of a bite, but it’s definitely on the mild end of things – so don’t be afraid of the heat!
