Korean Army Stew
Traditionally made to feed an army but perfect for feeding your army at home. This Korean Army Stew is packed full of flavour and plenty of different ingredients so there’s something for everyone to enjoy.
What You Need
- 1 pack Three Aussie Farmers Farmhouse Sausages
- 2 Tbsp. red chilli powder
- 2 Tbsp. mirin
- 1 Tbsp. soy sauce
- 2 garlic cloves, minced
- 2 tsp. sugar
- 2 tsp. gochujang
- 1 tin spam, thickly sliced
- 200g firm tofu, cubed
- 1 cup kimchi, roughly chopped
- 100g shiitake mushrooms, diced
- 150g king oyster mushrooms, sliced
- 150g enoki mushrooms, roughly torn
- 200g rice cakes
- 1 pack instant ramen noodles
- 2 eggs
- 6 cups chicken stock
- 2 slices cheddar cheese
- 4 spring onions, thinly sliced
How To Make It
- Cook sausages according to the pack instructions, then slice diagonally.
- Combine red chilli powder, mirin, soy sauce, garlic, sugar, and gochujang in a small bowl to make a spicy sauce. Set aside.
- In a large saucepan, arrange sausages, spam, tofu, kimchi, mushrooms, rice cakes and instant noodles. Spoon spicy sauce over the noodles.
- Add chicken stock, place pot over high heat and bring to the boil. Reduce heat to med, and carefully crack in the eggs. Cover, then simmer for 5 mins until the eggs are cooked.
- Remove lid, add cheese slices and garnish with spring onion.
- Serve hot and enjoy!
