Leg Ham, Cheddar And Polenta Frittata

what you need
- 1 Three Aussie Farmers Shoulder Ham
- 200g leg ham, diced
- 2 Tbsp. olive oil
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1 ½ cup milk
- 1/3 cup polenta
- 6 eggs
- 1 ½ cup cheddar, grated
- 1 tsp. salt
- ½ tsp. pepper
- 1 cup zucchini, grated
- 12 cherry tomato halves
- Rocket, to serve
- Prosciutto, to serve
- Figs, to serve
- Balsamic glaze, to serve
how to make it
- Preheat oven to 200˚C.
- Heat oil in an oven proof fry-pan over med. heat. Add onion and cook for 2 mins. Add garlic and cook for 1 min.
- Add milk to fry-pan and 1 cup water. Bring to a simmer then whisk in polenta. Reduce heat and cooked for 8 mins or until polenta is almost cooked.
- Combine eggs, cheese, ham, zucchini, tomatoes, salt and pepper in a bowl. Stir through polenta mixture.
- Place fry-pan in oven and cooked for 20 – 30 mins or until golden.
- Top frittata with rocket, prosciutto, Figs and a drizzle of balsamic glaze.
