

PUMPKIN FETA SPINACH AND SAUSAGE PASTA TRAY BAKE
Fresh, tasty and simple to throw together, this classic pairing of pumpkin, feta and spinach with our delicious Farmhouse sausages is a perfect weekday meal.
what you need
- 1 pack Three Aussie Farmers Farmhouse Sausages
- ½ butternut pumpkin, chopped
- 5 garlic cloves, whole peeled
- 200g feta, block
- 5 sprigs fresh thyme
- 20ml olive oil
- Salt and pepper, to taste
- 150g baby spinach
- 500g pasta penne
- 2 Tbsp. flaked almonds, toasted
- 1 tsp. chili flakes to garnish
how to make it
- Preheat fan-forced oven to 180⁰C.
- Place the block of feta into the centre of the roasting dish, surround with pumpkin, garlic cloves and fresh thyme. Cover with oil and place into the oven and bake for 30 mins.
- While pumpkin is roasting, cook pasta and sausages as per pack instructions.
- Remove baking tray from oven, mash garlic cloves and mix well so that feta has formed a sauce.
- Add spinach, pasta and sliced sausages, stir to combine.
- Garnish with toasted nuts and chili flakes.
- Serve and enjoy.
