Sausage and Red Onion Quiche
Looking for a delicious meal that’s perfect for any time of day? Our Sausage and Red Onion Quiche is just the ticket! Whether you’re serving it for brunch, lunch, or dinner, it’s a dish that’s as versatile as it is tasty.
What You Need
- 1 pack Three Aussie Farmers Farmhouse Sausages, casings removed
- 3 sheets shortcrust pastry
- 2 tsp. oil
- 12 eggs
- 500ml milk
- 3 Tbsp. fresh thyme, finely chopped
- 250g cheese, grated
- 1 red onion, sliced
- 1 cup spinach leaves
- Salt and pepper, to taste
How To Make It
- Pre-heat fan forced oven to 200°C.
- Grease a large baking dish and line with the pastry, trimming excess dough from the edges. Place a sheet of baking paper on top of the pastry and cover with pastry weights*. Place in the oven and bake for 20-25 mins until the pastry is crisp and browned. Remove from the oven and let it cool completely.
- Heat oil in a fry-pan over med. heat. Add sausage meat and cook, breaking into small pieces for 6 mins or until cooked through.
- In a bowl, whisk together the eggs, then add milk, thyme and season with salt and pepper. Add cheese and sausage meat then stir to combine.
- Place half the sliced onion on the bottom of the pastry, gently pour the egg mixture over before topping with the remaining onion.
- Place in the oven and cook for 20-25 mins until the egg mixture is set. Remove from the oven and allow to stand for 10 mins.
- Top with spinach leaves, then serve and enjoy!
*Tip – you can use rice if you don’t own pastry weights.
