Sausage and Red Onion Quiche

What You Need

  • 1 pack Three Aussie Farmers Farmhouse Sausages, casings removed
  • 3 sheets shortcrust pastry
  • 2 tsp. oil
  • 12 eggs
  • 500ml milk
  • 3 Tbsp. fresh thyme, finely chopped
  • 250g cheese, grated
  • 1 red onion, sliced
  • 1 cup spinach leaves
  • Salt and pepper, to taste

How To Make It

  1. Pre-heat fan forced oven to 200°C.
  2. Grease a large baking dish and line with the pastry, trimming excess dough from the edges. Place a sheet of baking paper on top of the pastry and cover with pastry weights*. Place in the oven and bake for 20-25 mins until the pastry is crisp and browned. Remove from the oven and let it cool completely.
  3. Heat oil in a fry-pan over med. heat. Add sausage meat and cook, breaking into small pieces for 6 mins or until cooked through.
  4. In a bowl, whisk together the eggs, then add milk, thyme and season with salt and pepper. Add cheese and sausage meat then stir to combine.
  5. Place half the sliced onion on the bottom of the pastry, gently pour the egg mixture over before topping with the remaining onion.
  6. Place in the oven and cook for 20-25 mins until the egg mixture is set. Remove from the oven and allow to stand for 10 mins.
  7. Top with spinach leaves, then serve and enjoy!

*Tip –  you can use rice if you don’t own pastry weights.
