Sausage Fajita Pasta

What You Need

  • 1 pack Three Aussie Farmers Classic Aussie Banger Sausages
  • 1 pack fajita flavour mix
  • 1 red onion, sliced
  • 1 small red capsicum, sliced
  • 1 small yellow capsicum, sliced
  • 2 Tbsp. tomato paste
  • 500ml chicken stock
  • 250g dried rigatoni pasta
  • 2 Tbsp. sour cream – optional if you like it creamy
  • ½ lime, juiced – optional to add zing
  • 2 Tbsp. fresh coriander, chopped
  • Grated parmesan or smoky cheddar, to serve
  • 1 tsp. chilli flakes, optional

How To Make It

  1. Cook sausages according to pack instructions, then remove from the pan and slice.
  2. Cook pasta according to pack instructions, then drain and reserve 100ml of the cooking water.
  3. In the same pan as the sausages, add onions and sauté until soft, then add capsicum, fajita seasoning and sour cream and stir through.
  4. Return sausages to the pan, then add pasta and half the cooking water. Stir to combine, adding extra cooking water if needed.
  5. Add coriander and cheese, and mix through. Garnish with chilli for extra spice.
  6. Serve and enjoy!
