Sausage Fajita Pasta
Spice up your dinner routine with a burst of Mexican flavour this week!
What You Need
- 1 pack Three Aussie Farmers Classic Aussie Banger Sausages
- 1 pack fajita flavour mix
- 1 red onion, sliced
- 1 small red capsicum, sliced
- 1 small yellow capsicum, sliced
- 2 Tbsp. tomato paste
- 500ml chicken stock
- 250g dried rigatoni pasta
- 2 Tbsp. sour cream – optional if you like it creamy
- ½ lime, juiced – optional to add zing
- 2 Tbsp. fresh coriander, chopped
- Grated parmesan or smoky cheddar, to serve
- 1 tsp. chilli flakes, optional
How To Make It
- Cook sausages according to pack instructions, then remove from the pan and slice.
- Cook pasta according to pack instructions, then drain and reserve 100ml of the cooking water.
- In the same pan as the sausages, add onions and sauté until soft, then add capsicum, fajita seasoning and sour cream and stir through.
- Return sausages to the pan, then add pasta and half the cooking water. Stir to combine, adding extra cooking water if needed.
- Add coriander and cheese, and mix through. Garnish with chilli for extra spice.
- Serve and enjoy!
