Sausage & Kale Minestrone Soup
This nourishing soup is packed with savoury sausage mince, fresh kale, and a medley of vegetables. It’s a comforting and wholesome dish, perfect for any time you’re craving a warm, satisfying meal.
What You Need
- 1 pack Three Aussie Farmers Farmhouse Sausages, casings removed
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1 red chilli, finely chopped
- 1 small broccoli, small florets
- 2 zucchinis, sliced
- 250g short pasta
- 1.5L chicken stock
- 200g kale, stalks removed and roughly chopped
- 100g semi dried tomatoes
- 1 lemon, zest and juice
- 1 Tbsp. parmesan, grated
How To Make It
- In a large oiled saucepan, sauté onion over med. heat until softened.
- Add garlic, chilli and crumbled sausage meat to the pan and cook until browned, breaking into smaller pieces with a spatula as needed.
- Add broccoli and zucchini and cook until softened. Add uncooked pasta and chicken stock, then stir and bring to the boil.
- Reduce heat to low and simmer covered for approx. 10 mins or until the pasta is cooked to your liking.
- Add kale, semi dried tomatoes and 1 Tbsp. lemon juice, then stir to combine and remove from heat.
- Ladle into bowls, garnish with lemon zest and parmesan.
- Serve and enjoy!
