Sausage & Kale Minestrone Soup

What You Need

  • 1 pack Three Aussie Farmers Farmhouse Sausages, casings removed
  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 red chilli, finely chopped
  • 1 small broccoli, small florets
  • 2 zucchinis, sliced
  • 250g short pasta
  • 1.5L chicken stock
  • 200g kale, stalks removed and roughly chopped
  • 100g semi dried tomatoes
  • 1 lemon, zest and juice
  • 1 Tbsp. parmesan, grated

How To Make It

  1. In a large oiled saucepan, sauté onion over med. heat until softened.
  2. Add garlic, chilli and crumbled sausage meat to the pan and cook until browned, breaking into smaller pieces with a spatula as needed.
  3. Add broccoli and zucchini and cook until softened. Add uncooked pasta and chicken stock, then stir and bring to the boil.
  4. Reduce heat to low and simmer covered for approx. 10 mins or until the pasta is cooked to your liking.
  5. Add kale, semi dried tomatoes and 1 Tbsp. lemon juice, then stir to combine and remove from heat.
  6. Ladle into bowls, garnish with lemon zest and parmesan.
  7. Serve and enjoy!
