

Sausage, Onion & Capsicum Sub
Attention all sandwich lovers, we may have just whipped up the ultimate comfort sandwich. Think juicy sausages, saucy onions and tender capsicums all loaded into a toasty sub roll, it’s comfort food at its finest!
What You Need
- 1 pack Three Aussie Farmers Farmhouse Sausages
- 2 Tbsp. oil
- 1 brown onion, cut into wedges
- 1 red onion, cut into wedges
- 6 garlic cloves, thinly sliced
- 2 red capsicums, sliced
- 1 red chilli, finely sliced
- 4 Tbsp. tomato paste
- 2 tsp. Italian herbs
- ⅓ cup red wine vinegar
- 2 large crusty bread rolls, toasted
- 50g Romano cheese, grated
- Handful fresh basil leaves
- Salt & pepper, to season
How To Make It
- Cook sausages according to pack instructions. Once cooked sliced sausages lengthways and return to pan to sear the sides.
- Heat oil in a pan over med. heat. Add onion and garlic and cook for 5 mins until softened. Add capsicum and chilli, then cover and cook for a further 7 mins until capsicum is tender.
- Add tomato paste and Italian herbs, then stir to combine. Add vinegar and stir, then cover and cook for 5 -7 mins. Season with salt and pepper.
- Evenly divide the onion and capsicum mixture between the rolls, then add sausages and top with cheese and basil.
- Serve and enjoy!
