Sausage Wonton Noodle Soup
It might be warm outside, but this dish is a cracker any time of the year. A classic Chinese style wonton soup that’s mild yet full of flavour to warm the soul.
What You Need
- 1 pack Three Aussie Farmers Farmhouse Style Sausages, casings removed
- 1 Tbsp. ginger, grated
- 1 garlic clove, grated
- 6 dried shitake mushrooms, soaked in water and diced
- 2 Tbsp. soy sauce, plus extra to serve
- 2 Tbsp. Chinese cooking wine
- 1 tsp. chicken stock powder
- ½ tsp. ground white pepper
- 1 egg
- 1 Tbsp. cornflour
- 1 small baby bok choy bunch, sliced
- 24 wonton wrappers
- Water
- 200g thin egg noodles
- 1 Tbsp. fresh chives, chopped, to serve
Soup
- 1 Tbsp. crunchy chilli oil, to serve
- 2L Chicken stock
- 2 spring onions, chopped, green stalks thinly sliced to serve
- 2 garlic cloves, crushed
- 4 slices ginger
- 3 Tbsp. soy sauce
- 2 tsp. sugar
- 1 tsp. sesame oil
How To Make It
- In a large mixing bowl, combine all ingredients except the wrappers, water and serving garnishes to make the filling. Mix to form a thick paste.
- Create a circle with your thumb and index finger. Place a wonton wrapper over the top and spoon 2 tsp. of filling in the middle and press down. Close the circle to seal in the filling and pinch together with some water. Repeat this step until all the filling and wrappers are finished.
- In a large saucepan, add all the soup ingredients, then bring to the boil. Carefully add wontons and boil until they float. Add bok choy, then remove from the heat.
- Prepare noodles according to pack instructions, then evenly divide into serving bowls.
- Ladle soup and wontons into bowls, then top with green spring onions, chives and crunchy chilli oil.
- Serve and enjoy!
TIP: We used Crispy Lao Gan Ma Chilli in Oil. It’s available in most Woolworths, Coles and your local Asian grocer. It’s a very popular chilli oil that even John Cena eats!
