Sausages with Cherry Tomatoes and Broccolini
Healthy cooking doesn’t need to be complicated. This one pan Sausages with Cherry Tomatoes and Broccolini is quick to throw together and makes the perfect week night meal.
What You Need
- 1 pack Three Aussie Farmers Farmhouse Sausages
- 500g broccolini, trimmed
- 250g cherry tomatoes
- 4 garlic cloves, minced
- 1 Tbsp. fresh thyme
- 45g butter, cubed
- Salt and pepper, to season
How To Make It
- Cook sausages according to pack instructions. Once cooked slice into thick pieces and return to the fry-pan.
- In a pot of salted, boiling water add broccolini and cook for 2-3 mins. Remove and add to a bowl of cold water to stop the cooking process, then drain.
- Add tomatoes, garlic and thyme to the pan, stir and cook for 2 mins. Using the back of a wooden spoon, press down on some of the cherry tomatoes to release the juices and continue cooking for another 2 mins.
- Add the broccolini and season with salt and pepper. Cover and cook for 3 mins until the broccolini is tender.
- Remove from the heat and stir through the butter.
- Serve and enjoy!
