The Ultimate Brekkie Share Platter

If you’re looking for a different way to feed the masses in the morning, or you’re just plain starving, serve up this ultimate brekkie share platter filled with all the staples for the perfect start to the day.

What You Need

  • 1 pack Three Aussie Farmers Farmhouse Sausages
  • 6 SunPork Fresh Foods Bacon Rashers
  • 3 potatoes, diced into chunks
  • ½ cup olive oil
  • 2 Tbsp. red wine vinegar
  • ½ cup fresh parsley
  • 1 red chilli
  • ½ tsp. oregano
  • 1 tsp. salt
  • 100g truss tomatoes
  • 3 stalks kale, stems removed
  • 6 eggs
  • 50g fresh rocket

How To Make It

  1. Pre-heat fan-forced oven to 180⁰C.
  2. In a large saucepan over high heat, boil potatoes in salted water until tender. Drain and place onto a lined baking tray, then drizzle with oil and sprinkle with salt. Place into the oven for 15 mins or until crispy and golden.
  3. To make chimichurri, pour oil, vinegar, parsley, chilli, oregano and salt into a blender, then blitz until a paste forms and set aside.
  4. Take half the tomatoes and place onto a lined baking tray, then place into the oven with the potatoes. Remove from the oven when they blister. Slice the remaining tomatoes in halves.
  5. Cook sausages and bacon according to pack instructions, then slice into pieces or leave whole.
  6. Using the same fry-pan, sauté kale in sausage and bacon drippings until bright green and set aside.
  7. In a clean, non-stick fry-pan, fry eggs until cooked to your liking and place onto a large serving platter.
  8. To build your platter, begin by layering bacon and sausages around eggs, followed by roasted potatoes, kale, rocket and tomatoes.  Season with salt and pepper and drizzle with chimichurri.
  9. Serve and enjoy!
