Zesty Mojo Pulled Pork Rolls
You can’t go wrong with our slow cooked Aussie pulled pork and this fresh citrus mojo drizzle. Bang it in a roll for a quick weekend lunch in the backyard.
what you need
- 1 pack Three Aussie Farmers BBQ Pulled Pork
- 100ml olive oil
- 6 garlic cloves, finely chopped
- 2 limes, juiced
- 2 oranges, juiced
- 1 tsp. ground cumin
- 1 tsp. smoked paprika
- ½ cup fresh mint leaves, loosely packed
- ½ cup fresh coriander leaves, loosely packed
- 6 bread rolls
- 2 eschalots, finely sliced
how to make it
- Prepare mojo marinade by blending oil, garlic, lime juice, orange juice, cumin, paprika, mint and coriander until a smooth paste forms.
- Add ⅔ of marinade to a bowl and mix through pulled pork, then refrigerate for 1 hr.
- In a fry-pan over med-high heat, cook pork for 5 mins.
- Slice bread rolls in half and fill with a generous amount of pulled pork, drizzle with mojo sauce, garnish with thin slices of eschalots and herbs.
- Serve and enjoy!
You can’t go wrong with pulled pork. Especially slow cooked Aussie pulled pork that’s faster to make than baked beans on toast. It’s a big claim, but this might be the best thing since sliced bread… The only hard bit is deciding how to eat it – sliders, nachos, tacos, wraps, salads, pasta,- or you could forget that and just grab a fork.
