Green Pesto & Sausage Pasta

what you need

  • 1 pack Three Aussie Farmers Louisiana Sausages, casing removed
  • ½ cup basil leaves
  • 100g baby spinach leaves
  • 2 garlic cloves, crushed
  • 2 red chillies, chopped
  • 100ml olive oil
  • 1 lemon, juiced
  • 500g spaghetti
  • 50g parmesan, grated
  • 50g pistachios, shelled
  • Salt and pepper, to taste

how to make it

  1. Add basil, spinach, garlic, one chilli and olive oil to a blender and blitz into a paste. Add lemon juice and season with salt and pepper to taste.
  2. Cook pasta according to pack instructions.
  3. In a fry-pan over med-high heat, cook the sausage meat in bite size pieces until, browned on all sides.  Remove and set aside
  4. Add pesto sauce to the fry-pan and cook for 2-3 mins.
  5. Add pasta and mix well, add 1-2 Tbsp. pasta water as needed to moisten the pan.  Add the sausage meat and mix well.
  6. Garnish with parmesan, pistachios and fresh basil leaves.
  7. Serve and enjoy!
