

Green Pesto & Sausage Pasta
Packed with green goodness, this quick and easy mid-week family meal is sure to satisfy.
what you need
- 1 pack Three Aussie Farmers Louisiana Sausages, casing removed
- ½ cup basil leaves
- 100g baby spinach leaves
- 2 garlic cloves, crushed
- 2 red chillies, chopped
- 100ml olive oil
- 1 lemon, juiced
- 500g spaghetti
- 50g parmesan, grated
- 50g pistachios, shelled
- Salt and pepper, to taste
how to make it
- Add basil, spinach, garlic, one chilli and olive oil to a blender and blitz into a paste. Add lemon juice and season with salt and pepper to taste.
- Cook pasta according to pack instructions.
- In a fry-pan over med-high heat, cook the sausage meat in bite size pieces until, browned on all sides. Remove and set aside
- Add pesto sauce to the fry-pan and cook for 2-3 mins.
- Add pasta and mix well, add 1-2 Tbsp. pasta water as needed to moisten the pan. Add the sausage meat and mix well.
- Garnish with parmesan, pistachios and fresh basil leaves.
- Serve and enjoy!
