

Sausage & Gnocchi Tray Bake

What You Need
- 1 pack Three Aussie Farmers Classic Aussie Bangers, casings removed
- 2 Tbsp. oil
- 500g potato gnocchi
- 400g cherry tomatoes, halved
- 1 red onion, diced
- 4 garlic cloves, minced
- 60ml water
- 1 cup basil leaves, finely chopped
- ½ lemon, juiced
- 25g pine nuts
- Salt and pepper, to season
- Parmesan cheese, grated
How To Make It
- Pre-heat fan forced over to 180°C.
- In a large baking dish, add 1 Tbsp. oil, gnocchi, tomatoes, onion and 2 garlic cloves. Season with salt and pepper and toss to combine.
- Tear sausages into pieces over the top then add water. Place into the oven and cook for 25 mins, until the sausages are cooked.
- Meanwhile, in a bowl combine the remaining oil, basil, remaining garlic, lemon juice and salt.
- Drizzle the basil oil and pine nuts over the gnocchi and top with grated parmesan.
- Serve and enjoy!
